Sourcream casserole

Ingredients

1 bag broad noodles (or any type..I have used everything or anthing I had) 1 large sweet onion chopped 1 lg. sourcream 1 lg. cottage cheese 1 lb. ground beef 1/2 green pepper chopped 1/2 tsp. garlic powder salt and pepper to liking 1 can crushedtomatoes (can use hunts with basil etc) grated sharp cheese
Procedure

Boil noodles, drain, mix with 1/2 of the chopped onion and sourcrean and cottage cheese, set aside. Brown ground meat with remaining onion,salt, pepper, garlic and green pepper.Drain Mix in tomatoes, In large casserole place 1/2 the noodle mixture then all meat mixture,then rest of noodles, top with cheese. (It is layered not mixed) Bake at 350 45 min to hour til bubbles

Cornbread casserole

Ingredients

3 eggs
1/2 c butter or marg. melted
1/2 tsp.salt
7 oz. pkg.corn muffin mix
8 oz.sour cream
16 oz can creamed corn
16 oz can whole corn,drained
beat eggs with butter.add salt,muffin mix and sour cream. mix well. add corns. bake in a 8x8 pan at 350 for 30-35 minutes. big hit on holidays. i make 2!!!

Mexican Casserole
submitted by chubbers

• 1 large 13-ounce package Doritos (save 2 cups for casserole topping)
• 2 tbsp. onion, grated
• 1 10-ounce can chili with beans
• 10- to 15-ounce enchilada sauce
• 8-ounce can tomato sauce
• 1 and 1/2 cups shredded cheddar cheese

Topping Ingredients

•2 cups Doritos
• 1/2 cup shredded cheddar cheese
• 1 1/4 cups sour cream

Casserole Directions

Preheat oven to 375 degrees

Crumble 6 cups Doritos with your hands into a large mixing bowl.

Add the onion, the chili, the enchilada sauce, tomato sauce and 1 and 1/2 cups of cheddar cheese to the crumbled Doritos. Stir with a rubber spatula to combine. Place mixture into an 8 1/2 x 11-inch oven proof casserole dish.

Bake for 20 minutes.

Remove from the oven. Spread the sour cream over the top of the casserole with a large spoon or rubber spatula. Top with remaining 2 cups Doritos. Then sprinkle with the 1/2 cup of the cheddar cheese.

Bake for another five minutes and serve.

No Peek Casserole

The no peek casserole is really nice, we've had it a few times - I leave out the french onion soup mix as I find it too salty but I'll post the original recipe that was on THS.

2-3 lb stewing meat
1 can chicken mushroom soup - I put in a can of each Fay.
1/2 cup gingerale
1 pky dry french onion soup mix
extra mushrooms (optional)

Preheat oven to 180 degrees. Combine ALL ingredients, do not brown meat and do not dilute soup. Mix well. It will be lumpy before it's cooked. Pour into casserole dish and cover. Bake 2 1/2 - 3 hours but do NOT peek. Serve over pasta, rice or mashed potatoes.

*I've also made it with chicken instead of meat & it really is yummy.

Chicken Enchilladas

1/2 cup Onion
1 large garlic clove
2 Tbsp butter
1 can cream of chicken soup
1 cup sour cream
1 4 oz can chopped green chilies
1 1/2 Cups cooked chicken, cubed
1 1/2 C cheddar cheese, grated
1/2 C milk
10 tortillas

In saucepan over medium hear, cook onion and garlic in butter. Stir in soup, 1/2 C sour cream and chilies. Set 3/4 of the sauce aside. Stir in chicken and 1/2 C cheese into remaining sauce. In small bowl, combine reserved 3/4 C sauce with remaining sour cream and milk. Spread 1/2 C sauce over bottom of 13x9 baking dish. Place approximately 1/4 C chicken mixture in centre of each tortilla and roll tightly. Place seam side down in baking dish. Cover with remaining sauce. Sprinkle with salsa if desired and remaining cheese. Bake at 350 for 20-25 minutes. Delic!

Serve the following, which are in separate dishes, over cooked rice - chicken fricasse; chinese noodles; diced celery; pineapple chunks; shredded cheese; chopped onions; raisins; coconut; sunflower seeds; slivered almonds; diced tomatoes.

CHICKEN POT PIE

2 deep dish pie crusts
2 cans mixed vegetables
2 cans cream of chicken soup, undiluted
2 cans chicken breast
Mix ingredients; pour into curst. Top with 2nd crust & bake 350 for 45 min.

CHEESY POTATOES

Cube boiled potatoes & fry with onions. Cook bacon till crisp; drain & crumble. Mix potatoes & bacon in a baking dish. Pour cheese sauce over the top & bake till bubbly.

FRITO PIE

Put a bag of Frito-type chips in the bottom of a baking dish. Next layer a can or two of chili. Top with grated cheese. Bake 350 degrees, until the cheese is bubbly.

QUICK & EASY MEAL

Here's what I do for a quick and easy meal...

2 boxes kraft dinner.... boil water, and make the noodles. In the meantime, chop one large onion or 2 medium onions, and slightly brown them with a handful of sliced fresh mushrooms (mushrooms optional)...Add a pound and a 1/2 of ground beef and continue cooking along with the onions....When done, add one 15oz can tomatoes, (crush tomatoes), (I sometimes use fresh tomatoes if I have a lot of them, and they are ripening too fast)...also add one 8oz tomato sauce...and a can of water.....let that simmer for about 30 minutes, then add the two packages of cheese from the kraft dinner, and the drained rinsed noodles, mix well, and all done.....I don'T even make a salad with this, as my husband likes it alone.....but salad, and rolls would be a good topper...hope you enjoy this..... Sorry, I forgot to say, salt, pepper and garlic powder the meat and veggies.....(I use fresh garlic, or garlic granules), but garlic is optional....I would say, season to taste with these three spices....

HOBO DINNERS


Take a piece of aluminum foil big enough to hold a large oval shaped extra lean hamburger patty, put some can green beans on one of patty, then put some can corn in center of patty, then slice up some potato and put on other end of patty. Top with slices of onion, season to taste, put about 2 tablespoon of water over all, make suring aluminum foil is up around patty and veg so that water doesn't spill out. Now wrap everything up place on a cookie sheet and bake at 350 degrees for 30 to 45 min. One pound of hamburger, and 1 can of green beans and corn and 2 potatoes will make enough for 2 people.

I have one that I am not allowed to go to a family get-together without!!! I have made it so much, I can make it from memory!!! Everyone LOVES it!!! Hope you do, too. It's very easy!

BROCCOLI CHEESE CASSEROLE

8 oz. pkg Rice-A-Roni chicken flavor
1 pkg (10 oz) frozen chopped broccoli
1 can cream of chicken soup
1 jar Cheese Whiz

Preheat oven to 350°. Cook Rice-A-Roni according to package directions. Cook broccoli according to package directions. Use very little salt. Place ingredients in casserole dish in this order: 1 layer of Rice-A-Roni then, 1 layer of broccoli. Dilute soup with 1/2 soup can of water and pour over broccoli. Top with dollops of Cheese Whiz and bake.

Baking time: 30-40 minutes
Pan size: 13” X 9” casserole dish
Serves: 12-14
