My grandson, his friend and I baked fortune cookies one
day and it was a lot of fun. You just have to work quickly. We
only baked six at a time and we each folded two. Otherwise they
would cool too fast and get too brittle to fold. They were yummy!
Ingredients:
- 1 egg white
- 1/4 cup Sugar
- 1 Tbsp. Water
- 2 Tbsp. butter, melted
- 1/4 tsp. vanilla
- 1/3 cup flour

Instructions:

here or make your own and cut into strips.
- Preheat oven to 350 degrees F. Grease cookie sheet.
- Mix egg white and sugar in a small bowl. Add water,
butter and vanilla and mix. Stir in flour.
- Drop by teaspoonfuls onto a cookie sheet. Swirl the batter
with the back of a spoon until spread very thin and almost
transparent.
- Bake 3 to 5 minutes until lightly browned on edges.
- Only bake a few cookies at a time to allow time for folding
before they cool... about four at a time per person folding.
Be careful of burns and work very fast!
- Put a fortune in the center of each cookie. Fold cookie in
half and then fold again draping over the edge of a bowl to form
the boomerang shape.
- Place each cookie in a muffin tin cup to cool. Makes 8
cookies.
- For a nice gift, box up cookies in a Chinese food take out
box. Ask for one at the Chinese restaurant or save one and
make a template from posterboard. Mini box template
