Potatoes

1/4 cup (1/2 stick) butter,
softened
4 ounces regular cream cheese, softened
1 teaspoon vanilla extract
16 ounces confectioner sugar
7 ounces sweetened flaked coconut (about 2 &1/2 cups)
ground cinnamon for rolling
Cream together the butter and cream cheese in a large bowl. Add
the vanilla and confectioner sugar and beat until a ball is
formed. Stir in the coconut with a spoon. Roll small
amounts in your hands to form potatoes. Remember potatoes
are not perfectly shaped! Roll your potatoes in a dish of
cinnamon. Place on a cookie sheet, cover and chill until firm,
about one hour. Now roll in cinnamon a second time for extra
dirty potatoes. Note: If you find a green Irish potato
mixed in, a leprechaun has visited to bring you good luck and
sometimes a pot of gold! Yields about 5
dozen. |
