5 or 6 tablespoons softened butter
1/2 cup light Karo syrup
1/2 teaspoon salt
1/2 teaspoon vanilla
3 & 1/2 cups confectioner sugar
3 & 1/2 cups flaked coconut
cinnamon for rolling
Mix first four ingredients. Add confectioner sugar and coconut
and knead until shiny. Roll small
amounts in your hands to form potatoes. Remember potatoes
are not perfectly shaped! Roll your potatoes in a dish of
cinnamon. Roll a second time for extra dirty potatoes. Do
not refrigerate mixture. Note:
If you find a green Irish potato mixed in, a leprechaun has
visited to bring you good luck and sometimes a pot of gold!
